So after 9 years of Marriage... I'm attempting to make Home-Style Meatloaf....

It's been nine years since my husband and I said our vows to each other and of the thousands of meals I've made, meat loaf hasn't been one of them. 

Though seemingly a simple meal, I've always been completely intimidated by it. I'm not sure why. Maybe it's the tangy sauce that could make or break the experience; or maybe I thought it would be too wet or too dry. But whatever the reasons for my trepidation, today I will be brazen and attempt to make MEATLOAF!!!

Ingredients:

Meatloaf:
2 pounds of Ground Beef 
2 beaten Eggs
1/2 cup of Milk (add another 1/2 cup if loaf is too dry)
Worcestershire Sauce
1/2 cup of Chopped Onion  
1/2 cup of Chopped Green Bell Peppers
1/4 cup of Minced Garlic
1 cup of Italian Style Bread Crumbs 
Black Pepper
Salt
Garlic Powder
Onion Powder
2-3 tablespoons of Ketch up 
2-3 tablespoons of thick BBQ Sauce

Meatloaf Sauce:
Worcestershire Sauce 
1 small can of Tomato Paste
2-3 tablespoons of Ketch up 
2-3 tablespoons of thick BBQ Sauce 


Directions: 
Pre-heat your oven to 350 degrees & get your loaf pan out & ready. 

In a large bowl, add ground beef, chopped veggies, minced garlic,  Worcestershire Sauce, bread crumbs, milk, ketch up, BBQ sauce, & various seasonings - COMBINE by hand! 

Yes, it is very messy, but this is the only way to get all the ingredients properly mixed. Use latex gloves if you have to, but definitely mix by hand. 

Pat your mixture down into a loaf pan. Cook uncovered for 40 minutes in the oven on 350 degrees. 

While your meat loaf is cooking, in a small bowl combine your can of tomato paste, Worcestershire Sauce, 3 tablespoons of Ketch up, and 3 tablespoons of thick BBQ Sauce. This will be your red sauce that covers your loaf. Set it aside. 

After 40 minutes, take your meat loaf out of the oven. Spread your tomato sauce mixture evenly over your loaf. Return your meat loaf to the oven and continue to cook your loaf for another 20 to 25 minutes. 


Once your loaf has cooled a bit, remove it from the pan onto a platter. 


Serve it up hot with garlic mashed potatoes with gravy, country green beans, and a roll.
